In honor of Fat Tuesday, we’re featuring an excerpt from our award-winning book, Authentic New Orleans: Tourism, Culture, and Race in the Big Easy (NYU Press, 2007). Written by Tulane sociologist Kevin Fox Gotham, the book illuminates how New Orleans became a tourist town known as much for its excesses as for its eccentric Southern charm.
